'Call Me Cupcake' Has the Most Beautiful Cake Recipes Your Kids Have Ever Seen

Mini Princess Cakes

There are three littles in our family: two rough-and-tumble boys and their sweet baby sister. We love them all equally, of course, but to say she thinks she is special would be an understatement. I believe that if you tried to convince her that she is not a real princess, she would think you had lost your mind.

These gorgeous little cakes would be spot-on for her or any other precious little girl (and many bigger girls too). Princess cake is a traditional Swedish layer cake (Linda lives on Sweden’s west coast) consisting of light sponge cake, luscious cream filling, and whipped topping wrapped in rich marzipan.

By using the batter to make cupcakes and then slicing those into little layers and topping them with fresh or marzipan roses, Linda creates beautiful personal-size princess cakes that look like something out of the pages of a fairy tale.

Vegan No Bake Blueberry Lemon Cheesecake

If blueberries and lemons were people, they would be high school sweethearts who got married and lived happily ever after, because they go together so wonderfully.

They join together once more in this pretty purple cheesecake, which is not only divine tasting but also free of gluten, dairy, and eggs. Except for the inclusion of maple syrup, it is raw as well. That’s right! No baking necessary, which is so nice on a hot summer day or any time you don’t want to turn on the oven.

The crust is made of dates and almonds; the filling includes yummy ingredients such as cashews, coconut milk, lemon juice, and blueberries; and then to make the lovely lilac delicacy even more appealing, she tops it with more berries and purple peonies.

Chocolate Cake with Caramel Buttercream and Crunchy Caramel Popcorn

Chocolate, caramel, and crunchy popcorn all together and it looks beautiful to boot. Where do I sign up? On its own, this cake might seem like another rich, chocolatey layer cake (which is nothing to scoff at!). However, it is what is between and on top of those decadent layers that makes this confection both gorgeous and delicious.

Once you have baked the cake and cut it into four thin layers, you’ll spread buttercream all over it for the crumb coat. This is no ordinary buttercream, though, but a sweet, buttery, thick caramel Swiss meringue buttercream. A second coat of the luscious buttercream completes the cake, save for one final addition: the popcorn.

After you pop up a small batch of corn (microwaveable is fine!), you’ll drizzle creamy caramel all over it and bake it for just a short while. You will then pile this sweet, salty, crunchy goodness on top of the cake and drizzle on even more caramel. The result is almost too stunning to eat. Almost.

Rhubarb + Strawberry & Chocolate + Nutella Vertical Roll Cakes

These lovely cakes prove what so many of us already know: It is what’s on the inside that counts. Of course, the flavorful buttercream and gorgeous garnishes – edible flowers, berries, and candies — that Linda uses on these cakes are very pretty, but once you slice these indulgent sweet treats, you are able to see what makes them so uniquely attractive.

Using the same method you would use to make a jelly roll, Linda bakes a large, thin cake and cuts it into strips. She spreads hazelnut and chocolate cream over the chocolate cake, and rhubarb and strawberry compote over the white cake. The strips are rolled together into one cake, tipped onto their sides and frosted with chocolate or strawberry buttercream. Each slice of cake displays enticing vertical stripes of cake and filling.
